- 1⁄3 cup cooked rolled oats, prepared with light soy milk
- 1 tablespoon canned light coconut milk
- 1⁄4 teaspoon pure vanilla extract
- 1⁄8 teaspoon ground cinnamon
- 1⁄8 teaspoon ground nutmeg
- 1⁄4 cup coarsely chopped ripe mango
- 1 tablespoon chopped macadamia nuts
- 1⁄2 teaspoon honey
Tropical Sunrise Oatmeal
DIRECTIONS
1. Combine the oats, coconut milk, and vanilla extract in a small bowl.
2. Add the cinnamon and nutmeg and stir to combine.
3. Top with the mango and macadamia nuts and drizzle with honey. Sprinkle with additional cinnamon, if desired.
